Oatmeal Banana Breakfast Muffins

It’s the perfect time of year to turn the oven and bake up some treats. Here is a great recipe that I found on Welltraveledwife.

Ingredients:
2.5 cups old fashioned oats {or gluten-free}
1 cup plain low fat greek yogurt
2 eggs
3/4 cup sugar {or sweetener of choice}
1.5 tsp baking powder
1/2 tsp baking soda
2 ripe bananas

chocolate chips {optional)

Directions:
1. Preheat oven to 400 degrees. Spray tin with non-stick cooking spray or line 12 muffin tins with silicone or foil liners.
2. Place all of the ingredients, including bananas in a blender or food processor, and blend until oats are smooth. {I added the oats a cup at a time and blended in between}
3. Divide batter among cupcake liners, and bake for 15-20 minutes, or until toothpick comes out clean.
**Be sure to watch them closely in the oven, because depending on altitude, baking time may be a little less**
4. Most importantly: Enjoy & try not to eat them all at once!

These muffins are so easy to make and delicious! Not to mention, very healthy. Great breakfast, snack or dessert muffins. Play around with different add ins and toppings, I added a little cinnamon and vanilla to sweeten it up just a bit.

Are you feeling lucky this winter?

We have had a great start to our winter season.  Although, most of us tend to dread the never ending snow and bitter cold.  We grow to hate winter and all of its interruptions in our daily routines. Harsh driving conditions, dead plant life, slippery ice, and cold wind make it easy to complain about the winter.  I  tend to want to hibernate inside until it’s over.  This year I am trying something new.   What if we could find the beauty in winter, celebrate the snow, and embrace the cold? Sounds crazy I know.   What if we could really try to appreciate this season we are in and love the state of Minnesota for the next few months? Lets get out of our houses and find things to do to enjoy this time of year and see the beauty of the snow in these wintry months instead of just enduring it.  My family and I have been getting out on the beautiful Douglas Trail on the weekends for a little snowy adventure.  You can see from the pics, all of us (including the dogs) have had a blast!

October is fall, October is Halloween, October is sports, October is getting ready for the holidays but most importantly October is Breast Cancer awareness month. Over 230,000 women in the United States have been diagnosed with Breast Cancer this year and these numbers are still increasing. According to the American Cancer Society 1 in 8 women in the US will develop invasive breast cancer during their lifetime. A shocking 39,620 women have died from beast cancer in the year 2013. Although breast cancer diagnoses are decreasing throughout the years it is still the second leading cause of cancer death in women, exceeded only by lung cancer. So many lives and families all across the world are affected by this disease and it is something that cannot be ignored. Almost everyone, directly or indirectly has been affected by breast cancer in some way or another and almost all can agree, it is a tragedy. Cancer is a deadly disease and takes millions of lives each year, this month we are choosing to focus on breast cancer and raise awareness for men, women, and families all around the world. Although there is no cure for breast cancer there are some things we can do to help prevent developing this disease later in life. Living a healthy lifestyle and maintaining regular exercise, regularly getting checked by a physician, and being aware of signs and symptoms in your body can help to prevent breast cancer or catch it an early, treatable stage. My heart goes out to families who have lost a loved one from cancer or those battling with this disease now. From personal experience, the battle is hard but you are not alone. Join the Journey is a local organization dedicated to raising money and awareness for breast cancer. Every year they host an annual Join the Journey 10 mile breast cancer awareness walk and many other events throughout the year. Let us strive to create awareness for cancer and breast cancer every month of every year and celebrate the lives of those we have loved and lost.
